Pepperoni and focus
Netflix's Chef's Table is one of my favourite shows, and I love everything about it. The Vivaldi L'inverno (Winter) intro music, the videography, and the chefs' inspiring tales of risking it all.
Inspiring stories can fire the urge to jump and take risks. In most of these chefs' worlds, that meant sticking to what they believed would work. Episode 3 Chef's Table: Pizza interviews Ann Kim. She risked putting kimchi on pizza, challenging the pepperoni and cheese status quo to the extreme.
Beyond the romance of the beautiful scenery and the travel stories of the culinary world, it doesn't take long to realise these guys have worked extremely hard.
Knowing cooking is their path, every chef still accepts they'll be on the search for the unknown for the rest of their lives.
Accept the search, a lesson taken from the food entrepreneurs.
I often hear "I'm not going down," meaning not earning less or taking a lower position with a cheaper title. The search is not a linear graph up the slippery ladders. These pizza makers went down into the mud to go up, where you often find entrepreneurs.
In the mud where things are breaking, searching.
In my 20's, I started projects to take the risk. I was often ticking only that one box, not spending enough time in the mud.
Accepting the search means committing to the market you want to serve.
To focus.
